Pink Pinether Smoothie

pinkpinether1It was on a gloomy morning in KL (Kuala Lumpur) a couple of weeks back when I first came up with this super sexy smoothie recipe.  It was a ridiculously grey day so I decided that  a pop of color would nicely brighten up my mood.  And obviously – nothing beats pink.

With that thought, I went straight to grab one of my favorite fruits of all time – the vibrant Dragonfruit that may look quirky but is packed with a nutritious punch.  This fiber rich & low-cholesterol delight is heart-healthy, high in antioxidants, helps fight diabetes and  even signs of aging! Convinced yet ladies?  Dragonfruits come in red & white and although they don’t differ nutrient wise, I went for the red to get that pop of pink for this recipe.

pinkpinether2This raw, vegan shake not only look so sweet but also tastes like a treat! Pineapples lend some tangy goodness, apples give a natural sweetness while spearmint nicely refreshes.  Go head and get this Pink Pinether blitzing, it’s so good Inspector Clouseau might just come running :)

Pink Pinether Smoothie

Recipe type: smoothie, paleo, raw, gluten free, vegan, low fat, dairy free

Serving: 1-2 glasses (depending on size of the glass)

Ingredients

  • 1/4 of a large Pineapple (chopped roughly)
  • 3 Apples (chopped roughly)
  • a handful of Spear Mint leaves
  • 1/2 Red Dragonfruit (chopped roughly)
  • 4-5 Ice cubes

Instructions

  1. Put pineapple, apple & spearmint leaves through a juicer. Set aside
  2. Add dragonfruit, ice cubes and pineapple/apple/spearmint juice into a high speed blender. Blend well.
  3. Serve cold.

Notes

Remember to go organic as much as you can!
